- Ingredients for the Rub
- • 2 Rabbit Fryer
- • 1 tablespoon cayenne
- • 1 tablespoon cumin
- • 1 tablespoon chili powder
- • 1/2 tablespoon kosher salt
- • 1/2 tablespoon ground black pepper
- Ingredients for the Sauce
- • 1 large white onion diced
- • 3/4 cup tomato paste
- • 1 bunch green onion/scallion diced
- • 1/4 cup apple juice
- • 1/4 cup peeled garlic cloves
- • 1/4 cup cider vinegar
- • 1 tablespoon corn oil
- • 1/2 cup water
- • 1/2 cup whole grain mustard
- • 1 cup bourbon
- • 3/4 cup ketchup
- • 1 tablespoon cumin
- • 3/4 cup Worchestershire Sauce
- • 1 Ancho chili deseeded and diced
Preparation
Step 1
1. Combine the rub ingredients and apply to the rabbit – refrigerate overnight.
2. In a heavy bottomed pan over medium heat, cook the white and green onions and garlic in the oil until translucent. Combine the remaining ingredients in a blender and purée – add to the onions and simmer for 20 minutes. Let cool for at least one hour.
3. Coat each leg in the sauce, place in a covered pan on the grill on low or in the oven at 250 degrees for one hour.
