MUSTARD & BOURBON GLAZED RABBIT

  • Ingredients for the Rub
  • • 2 Rabbit Fryer
  • • 1 tablespoon cayenne
  • • 1 tablespoon cumin
  • • 1 tablespoon chili powder
  • • 1/2 tablespoon kosher salt
  • • 1/2 tablespoon ground black pepper
  • Ingredients for the Sauce
  • • 1 large white onion diced
  • • 3/4 cup tomato paste
  • • 1 bunch green onion/scallion diced
  • • 1/4 cup apple juice
  • • 1/4 cup peeled garlic cloves
  • • 1/4 cup cider vinegar
  • • 1 tablespoon corn oil
  • • 1/2 cup water
  • • 1/2 cup whole grain mustard
  • • 1 cup bourbon
  • • 3/4 cup ketchup
  • • 1 tablespoon cumin
  • • 3/4 cup Worchestershire Sauce
  • • 1 Ancho chili deseeded and diced

Preparation

Step 1

1. Combine the rub ingredients and apply to the rabbit – refrigerate overnight.

2. In a heavy bottomed pan over medium heat, cook the white and green onions and garlic in the oil until translucent. Combine the remaining ingredients in a blender and purée – add to the onions and simmer for 20 minutes. Let cool for at least one hour.

3. Coat each leg in the sauce, place in a covered pan on the grill on low or in the oven at 250 degrees for one hour.
