    Crusty Rolls

  • 1

    lb. Thinly Sliced Rare Deli Roast Beef

  • 2

    C. Arugula

  • Avocado-Sour Cream Spread (recipe below)

  • 1

    Ripe Avocado, peeled & pitted

  • 1/2

    C. Sour Cream

  • 2

    Tbsp. Mayonnaise

  • 2

    tsp. Prepared Horseradish

  • 1 1/2

    tsp. Ranch Dip Mix

Directions

Place bottoms of rolls on cutting board. Cut rolls in half vertically. Turn rolls cut side up. Trim bottom edge of rolls so they stand upright. Make a pocket in rolls by making a slit in the cut side, leaving the roll intact on bottom & sides. In the bowl of a food processor, combine avocado, sour cream, mayonnaise, horseradish & ranch dip mix. Pulse till smooth, scraping sides of bowl as needed. Spread 1 Tbsp. of spread inside each roll. Stuff with roast beef & arugula; serve immediately.
