Roast Beef Pockets With Avocado-Sour Cream Spread

Ingredients
- 10 Crusty Rolls
- 1 lb. Thinly Sliced Rare Deli Roast Beef
- 2 C. Arugula
- Avocado-Sour Cream Spread (recipe below)
- 1 Ripe Avocado, peeled & pitted
- 1/2 C. Sour Cream
- 2 Tbsp. Mayonnaise
- 2 tsp. Prepared Horseradish
- 1 1/2 tsp. Ranch Dip Mix

Preparation
Step 1
Place bottoms of rolls on cutting board. Cut rolls in half vertically. Turn rolls cut side up. Trim bottom edge of rolls so they stand upright. Make a pocket in rolls by making a slit in the cut side, leaving the roll intact on bottom & sides. In the bowl of a food processor, combine avocado, sour cream, mayonnaise, horseradish & ranch dip mix. Pulse till smooth, scraping sides of bowl as needed. Spread 1 Tbsp. of spread inside each roll. Stuff with roast beef & arugula; serve immediately.
