Cheese: Parmesan Crisps (Frico)

Ingredients

  • 1 Tablespoon of Flour
  • 1 1/2 cups of freshly graded parmesan cheese
  • 1 to 2 teaspoons grated scallions, Lemon Zest, Pepper, Coriander, or Rosemary/Thyme

Preparation

Step 1

Toss I tablespoon of flour with 1 1/2 cups of parmesan cheese

Add spices/herbs/zest

Make 12 mounds of the cheese mixture (2 Tablespoons each mound)on a baking sheet lined with parchment and cooking spray, flatten into 4" rounds.

Bake 375 degrees until golden, 8 to 10 minutes.

While hot, gently remove with a thin spatula and let cool completely.
