Fudge Nut Cookie Bars

Ingredients

  • Fudge:
  • 1 cup chocolate chips
  • 5 ounces evaporated milk
  • 3 tablespoons butter
  • 3/4 cup nuts, optional
  • 2 teaspoon vanilla
  • Cookie Dough:
  • 1 cup butter
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cups oatmeal

Preparation

Step 1

Make Fudge:

Put chocolate, evaporated milk, and butter into a small saucepan. Heat until chocolate and butter just melts. Take off heat and stir in nuts and vanilla. Set aside to cool.


Make Cookie Dough:

Preheat oven to 350 degrees F. Cream butter and brown sugar in a large mixing bowl. Add eggs and vanilla. In a medium mixing bowl, sift together flour, baking soda, and salt. Slowly add to wet ingredients. Add oatmeal. Mix until just combined.

Press 2/3 of cookie dough into a greased 9 x 13 inch pan. Spread cooled fudge over cookie dough. Spoon remaining 1/3 cookie dough over top. Bake for 20-25 minutes.
