  • 4 SERVINGS
  • • 4 boneless quail for an appetizer or
  • • 8 boneless quail as main course
  • • 1 lemon
  • • Garlic, minced
  • • Olive oil
  • • Fresh Rosemary & thyme
  • • Salt & pepper

Preparation

Step 1

1. Heat grill or broiler

2. Rub quail on both sides with lemon, olive oil and garlic

3. Season with rosemary, thyme, salt & pepper

4. Cook for 2 minutes per side over flame

5. Move away from flame, cover and cook for 3 minutes

6. Serve with grilled vegetables (marinated with the same seasonings) and couscous
