Ingredients

    cups graham cracker crumbs

  • 3

    TB sugar

  • 1/3

    cup butter, melted

  • 4

    pkgs (8 oz each) regular or light cream cheese, softened

  • 1

    cup sugar

  • 1

    tsp vanilla

  • 4

    eggs

Directions

Heat oven to 300 if using a dark springform pan or 325 if using a light springform pan. In a medium bowl, combine graham cracker crumbs, 3 TB sugar, & butter. Press into the bottom of a 9-inch springform pan. In a large bowl, beat cream cheese, 1 cup sugar, & vanilla with mixer until blended. Add eggs, one at a time, mixing on low speed after each egg, just until blended. Pour over crust. Bake for 55 minutes or until center is almost set. Cheesecake will look jiggly. Loosen cake from the rim of the pan. Cool before removing. Refrigerate for 4 hours.
