Ingredients
- 4 ozs grated cheddar (1 cup)
- 1/2 cup mayo
- 4 ozs cream cheese, at room temp
- 3 tbls sliced jarred pimientos
- 2 tbls grated onion
- kosher salt
- black pepper saltine

Directions
In a food processor, combine the Cheddar, mayonnaise, cream cheese, pimientos, and onion and puree until smooth. Season with ¼ teaspoon each salt and pepper. Serve with the saltines.
