Ingredients

  • 6 cups water
  • 1 1/2 tsp salt
  • 2 cups gluten free or brown rice elbow macaroni
  • 2 cups shredded Diya cheddar dairy free cheese
  • 1 cup of Diya shredded Pepperjack dairy free cheese
  • 2 tbl margarine
  • 2 tbl gluten free flour mix
  • 2 cups coconut milk
  • 1/2 medium onion, minced
  • 1 bay leaf
  • 1/4 tsp sweet paprika

Preparation

Step 1

Preheat oven to 350 degrees F.
Grease a 1 1/2 quart deep baking dish.

Macaroni:
Bring water and salt to a rolling boil in a medium saucepan.
Add & cook until tender macaroni.
Drain & remove to a large bowl.

Cheese sauce:
Mix two cheeses together.
Melt butter in a large saucepan over medium-low heat. Add flour whisking for 3 minutes.
Gradually whisk in coconut milk.
Stir in minced onion, bay leaf and paprika.
Simmer gently, stirring often, for 15 minutes.
Remove from heat and stir in three quarters of the cheese until melted thoroughly.
Stir in the macaroni.
Pour the entire mixture into baking dish & sprinkle with the remaining cheese.

Bake about 30 minutes
