Jayne's Stuffed Mushrooms

Ingredients
- white mushroom caps
- cream cheese
- bleu cheese
- parmesan cheese grated
- garlic
- green onion or chives
- bacon (optional)
- bread crumbs or panko
- White truffle oil (optional)

Step 1
Filling
Pluck stems off mushrooms, leaving the caps aside. Chop and mince stems and garlic and saute in light olive oil. In a bowl add cream cheese, blue cheese and grated parmesan cheese. Add chopped green onion. Drain any excess oil from stem /garlic mixture and add to bowl. The heat will soften the cream cheese. Add chopped bacon to mix (optional).
Baking
Preheat oven to 400 degrees. On baking sheet, drizzle olive oil on the bottom. Stuff your caps with the mixture. Place in oven until almost cooked (mushrooms will shrink).
Topping
Take out the mushrooms and sprinkle Panko/grated parmesan mix on the top of the mushrooms (option: add white truffle oil). Return to oven and broil until tops turn golden brown (a few minutes).
