Ingredients
- Cake:
- 1 18-ounce box lemon cake mix
- 1 3 1/2-ounce box instant pudding mix
- 4 eggs
- 1/2 cup vegetable oil
- 1 1/4 cups Mountain Dew soda
- 3-5 drops yellow food coloring
- Frosting:
- 3-4 cups powdered sugar
- 1 cup salted butter (room temp)
- 2 tablespoons Mountain Dew soda
- 1/2 tablespoon lemon juice
- 1/2 tablespoon lime juice
- 3-5 drops neon green food coloring
Preparation
Step 1
Mix cake mix, pudding and eggs well. Add in oil to the batter and mix for 2 minutes. Slowly pour in your soda and mix for another minute. Add food coloring and blend in.
Pour into cupcake liners and bake at 350 degrees for 13-17 minutes until toothpick inserted comes out clean. Cool before frosting.
To make frosting, beat butter until smooth and slowly add in 1 cup of powdered sugar at a time (about 3 cups) and mix well. Add lemon and lime juices and soda and mix well. Add any remaining sugar necessary for proper thickness. Add food coloring. You can add more soda if it's too thick or more sugar if it's too thin.
