Ingredients

  • 13/4 cups cake flour (not self-rising)
  • 3/4 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fat-free milk
  • 1/2 cup unsweetened applesauce
  • 2 egg whites

Preparation

Step 1

1. Preheat the oven to 350°F. Spray a 9 x 13-inch baking pan with nonstick spray.

2. Combine the flour, sugar, cocoa, baking soda, an salt in a large bowl. Combine the milk, applesauce, egg whites, and vanilla in another bowl. Add the milk mixture to the flour mixture. Gradually add the boiling water and stir until just smooth. The batter will be thin.
3. Pour the batter into the pan. Bake until a toothpick inserted in the center comes out almost clean, about 30 minutes. Cool the cake in the pan on a rack 10 minutes; remove from the pan and cool completely on the rack.

Cut into 24 pieces.
