Ingredients
- 1 tsp olive oil
- 1/2 cup chopped onion
- 2 tsp minced garlic
- 2 1/4 cups chopped chicken breast
- 1 (16 oz) can pinto beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (14 oz) can fat free less sodium chicken broth
- 1 (8 3/4 oz) can whole kernel corn, undrained
- 1 (4.5 oz) can chopped green chiles, undrained
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 6 Tbsp reduced fat sour cream
Preparation
Step 1
1. Heat oil in a dutch oven over med-high heat. Add onions and garlic; saute 2-3 min.
2. Add chicken and next 7 ingredients. Bring to a boil, reduce heat and simmer 15 minutes. Ladle soup into bowls; top with sour cream.
