Ingredients
- 4 tablespoons butter
- 2 medium tomatoes, peeled, seeded and coarsely chopped
- 1 tablespoon finely-minced onion
- 2 large cloves garlic, minced
- Salt and pepper, to taste
- 4 chicken breasts halves, skinned and boned
- 6 ounces feta cheese, thinly sliced

Step 1
In a small saucepan, place 3 tablespoons of butter, the tomatoes, onion and garlic. Add salt and pepper to taste; simmer, uncovered, over medium-low heat for 10 minutes. Meanwhile, in a medium skillet, over medium heat, sauté the chicken breasts in remaining 1 tablespoon of butter for 3 minutes on each side. When the sauce is ready, pour it over the chicken. Lay thin slices of feta cheese all over the top. Cover pan and simmer gently for 10 minutes. Baste sauce over breasts several times. Makes 4 servings.
