Ingredients
- 2 lbs green plantains
- 1/4 cup veg oil
- salt and pepper

Preheat oven to 350. Peel and slice plantains, thinly on the diagonal. Place on 2 rimmed baking sheets. Toss with 1.4 cup oil, then arrange on a single layer. season with salt and pepper. Bake until crisp, 30-35 minutes, flip halfway through. Drain on paper towels.
