Parmesan flavors this creamy rice dish

Ingredients

  • 1 cup sliced fresh mushrooms
  • 2/3 cup long grained rice
  • 1/2 cup chopped green pepper
  • 2 Tbs margarine or butter
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/4 cup dry sherry
  • 1/4 tsp dried sage, crushed
  • 2 tbs grated Parmesan cheese

Preparation

Step 1

In a medium saucepan cook mushroom, rice, and green pepper in margarine till green pepper is tender. Remove from heat. Stir in broth, water, sherry, sage, and 1/8 tsp pepper. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or till tender. Remove from heat; Let stand covered, for 5 minutes. Fluff with a fork. Sprinkle with Parmesan cheese.
