Mocha Tofu Cheesecake

Ingredients

  • Graham Cracker Crust:
  • 1 3/4 cups finely crushed graham crackers (15 crackers)
  • 1/2 cup butter, melted
  • Cheesecake:
  • 1 pound silky tofu
  • 1/2 pound cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 1 1/2 tablespoons flour
  • 1 1/2 tablespoons cornstarch
  • 8 ounces chocolate chips, melted
  • 1 cup sour cream
  • 1/2 cup espresso
  • 1 teaspoon vanilla

Preparation

Step 1

Make Crust:

Combine graham cracker crumbs and butter. Press into a greased 9 inch springfoarm pan.


Make Cheesecake:

Preheat oven to 250 degrees F. In a mixing bowl, cream tofu, cream cheese, and sugar. Add eggs, flour, and cornstarch and mix until combined. Add chocolate, sour cream, coffee, and vanilla. Pour into the springform pan. Bake 1 hour. Turn off the oven, but leave the cheesecake inside for 8 hours or overnight. Refrigerate until ready to serve. Run knife around edge and remove sides of springform pan.
