Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Each Red Bell Peppers, Finely Chopped
  • 1 Each Large Onion, Finely Chopped
  • 2 Stakes Celery, Finely Chopped
  • 1 Cups Carrots, Finely Chopped
  • 1/2 Pounds Ground Beef
  • 3/4 Pounds Bulk Sausage, Hot Style
  • 3/4 Pounds Bulk Sausage, Sweet Style
  • 1 Each Egg, Whipped
  • 3/4 Cups Bread Crumbs, Italian's Good
  • 1/2 Cups Parmesan Or Romano Cheese, Grated
  • 4 Each Pancetta, Chopped
  • 3 Cloves Garlic, Chopped Fine
  • 1/2 Cups Beef Stock
  • 1 small Can Tomatoes, Diced Or Stewed
  • 1 Tbsp Worcestershire Sauce

Preparation

Step 1

Preheat oven to 425degrees

Heat a small pan with olive oil - when it's hot saute -Pepper-onion- celery-carrots about 5minutes

Mix ground beef - and sausage with the egg - bread crumbs -cheese - and cooled veg's

Combine everything good and make them into meat balls -large size about 1 1/4 " thick

Place on a cookie sheet - drizzle with olive oil. Into the oven 20 minutes or until done.

In the small pan now drizzles olive oil and add Pancetta - Bacon works too, and render it down
Then add some more onions & garlic cook until done. Stir in the beef stock and tomatoes and
season to taste. Add Worcestershire and reduce heat to warm and let simmer until the meat loaf
is done.

Serve the meatloaf with the sauce over it.
