Shrimp and Scallop Salad with Mango Dressing

Ingredients

  • 1/3 c mango chutney
  • 2 T mayonnaise
  • 2 T orange juice
  • 12 oz large shrimp, peeled and deveined
  • 8 oz sea scallops
  • 6 c assorted greens
  • 2 peaches, peeled and sliced (or 2 nectarines)
  • 2 c red or green grapes

Preparation

Step 1

1. Spray grill with nonstick cooking spray. Preheat grill to medium. For dressing, in a small bowl stir together chutney, mayonnaise and orange juice.

2. Thread shrimp and scallops alternately onto 4 (10-inch) skewers. Grill 5 to 8 minutes or until shrimp and scallops are opaque. Remove from grill.

3. Meanwhile, arrange greens on 4 dinner plates. Top with fruit. Use fork to push seafood from 1 skewer onto each salad. Spoon dressing over salads.
