Ingredients

  • 4 Slices Bacon, diced
  • 1/2 Cup Onion, minced
  • 1 tsp. Garlic, minced
  • 3 Cups Potatoes, peeled and diced
  • 4 Cups Whole Kernel Corn
  • 8 Cups Chicken Broth
  • 1 Cup Milk
  • 1 Cup Heavy Cream
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper

Preparation

Step 1

In a large stockpot brown bacon then add onions; cook until tender. Next add garlic, potatoes, corn, and chicken broth. Bring to a boil, stirring constantly. Reduce heat and simmer, stirring occasionally until potatoes are tender. Add milk, cream, salt and pepper; mix well. Heat thoroughly but do not allow soup to boil.
