Ingredients
- 10 lemons
- 750 mL vodka (I used Svedka)
- 2 1/2 c. white sugar
- 3 c. water
Preparation
Step 1
Use a vegetable peeler to remove lemon peels in strips. If any white pith remains on the peels, use a small paring knife to trim them away.
Place lemon peels in a 2-quarter container with vodka. Store at room temperature for 4-7 days.
In a saucepan over medium heat, stir water and sugar until dissolved. Once simple syrup has cooled completely, pour over the lemon/vodka mixture. Let stand overnight at room temperature.
Strain limoncello using a mesh strainer and discard lemon peels. Transfer limoncello to individual bottles and store in the refrigerator for up to 1 month.
