Ingredients
- 4 ounces grated Cheddar (1 cup) 1/2 cup mayonnaise 4 ounces cream cheese, at room temperature 3 tablespoons sliced jarred pimientos 2 tablespoons grated onion kosher salt and black pepper saltine crackers, for serving

In a food processor, combine the Cheddar, mayonnaise, cream cheese, pimientos, and onion and puree until smooth. Season with ¼ teaspoon each salt and pepper. Serve with the saltines.
