PARMESAN BREADED POTATOES

These potatoes are very versatile and can be served with anything from marsala dishes to burgers. I keep bread crumbs on hand in the freezer, mixing any left over fresh herbs with the bread in a food processor.

Ingredients
- 1.5 red potatoes, sliced approx 1/2
- inch thick, washed and blotted dry
- 3 Tbs olive oil
- 1/2 cup dry bread crumbs
- 1/2 cup Parmesan cheese, grated
- 1/4 cup minced fresh herbs (parsley,
- basil or rosemary)
Preparation
Step 1
Preheat oven to 375, placing large baking sheet in oven at the same time.
Combine cheese, herbs and bread crumbs. In a large bowl, add the oil and toss potatoes until coated. Add bread crumb mixture and toss gently. Place potatoes on preheated baking sheet and bake for approx 30-40 minutes or until potatoes are soft and browned.
