Pumpkin Cranberry Bread

Ingredients

  • 1 C canned solid pumpkin
  • 1 C sugar
  • 1/4 C water
  • 2 large eggs
  • 1/4 C olive oil
  • 2 C flour
  • 2 t baking powder
  • 1/2 t salt
  • 1/4 t baking soda
  • 1/4 t cinnamon
  • 1/4 t ginger
  • 1/8 t clove
  • 1 C cranberries
  • 1 C chopped nuts

Preparation

Step 1

Preheat oven to 350. Butter loaf pan.
In large bowl, beat together pumpkin, sugar, water, eggs & oil. Sift in flour, baking powder, salt, baking soda & spices. Stir just til batter is smooth. Stir in cranberries & nuts, spread evenly.
Bake in middle of oven 1 hr. & 15 min., or til cake tester comes out clean. Cool in pan on rack 10 min. Turn bread out onto rack & cool completely.
