Penne Pasta with artichokes and spinach

Ingredients

  • Penne pasta (cook as directed)
  • 1 can artichokes in water, drained, cut into pieces
  • 1 cup frozen chopped spinach, thawed
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 to 1.5 c. half and half
  • 1/2 c. parmegianno reggiano
  • 1 tsp olive oil
  • 1 pat butter

Step 1

Cook pasta; saute butter, olive oil and garlic. Add chicken broth. Add half and half and parmesano-reggiano. Bring to boil and whisk then turn down to simmer. Add spinach and artichokes and cooked pasta. Stir to combine then set aside to allow sauce to thicken.
