Ingredients
- Extra-virgin olive oil, for liberal drizzling
- large portobello mushroom caps
- 1/4 # hamburger
- italian sausage
- tablespoons finely chopped fresh rosemary leaves
- Salt and pepper
- garlic
- bread crumbs
- tomatoes, chopped
- spinach (optional)
- ribs celery very thinly sliced
- 1/2 small onion, chopped
- flat-leaf parsley, leaves chopped
- chopped green pepper
- chedder cheese
Preparation
Step 1
Preheat oven 400 heat.
Cook ground beef and ital. sausage in fry pan.
Drizzle extra-virgin olive oil over mushrooms and season with rosemary and salt and pepper. Grill 5 minutes on each side then remove from grill.
While the portobellos cook,in a medium saucepan melt butter and cook tomatoes,spinach,garlic,green pepper, celery, onion and parsley and basil.
Add mixture to meat mixture. Add cheese. Toss with salt and pepper, to taste.
Top grilled mushrooms with mounds of the meat and veggie mixture.
Bake in preheated oven 15-20 minutes.
