Ingredients
- 1 lb orzo pasta
- 1 small minced red onion
- 1 pint halved red and yellow cherry tomatoes
- 1 15oz can garbanzo beans, rinsed
- 1/2 English cucumber, chopped
- 1/2 red bell pepper, chopped
- 1/2 cup fresh parsley, minced
- 2 stalks celery, minced
- 6 oz or more crumbled feta cheese
- 2 tsp minced garlic
- Salt and pepper
- 1/2 cup olive oil
- 1/3 cup lemon juice
- 1/4 cup dark balsamic vinegar
Preparation
Step 1
Cook orzo according to package directions and cool completely.
Mix all other ingredients with orzo EXCEPT feta and refrigerate for four hours or overnight.
Mix feta in last so it doesn't disintegrate so much.
