Ingredients

  • 4 english muffins, split
  • 4 tbs nonfat mayo
  • 1 tbs plus 1 tsp dijon mustard
  • 8 oz thinly sliced roast turkey
  • 16 large fresh basil leaves
  • 2 med tomatoes, cut into 8 thick slices
  • 1/4 tsp freshly ground black pepper
  • 3 oz thinly sliced part skim mozzarella cheese

Preparation

Step 1

1. Preheat the broiler. Place English muffin halves on a baking sheet and toast under broiler until golden.


2. In a small bowl, combine mayo and mustard.

3. Spread each muffin half evenly with the mayo mix. Top each with 1 oz of the turkey, 2 basil leaves, and a tomato slice. Sprinkle with the pepper, then top evenly with the mozzarella cheese.

4. Broil 4 inches from the heat for 4 minutes, or until the cheese is just melted and bubble. Serve hot.
