Ingredients

  • 2 1/2 Tbsp yeast
  • 1 cup warm water
  • 1 tsp sugar
  • 7 cups flour
  • 1 tsp salt
  • enough cinnamon to turn it light brown, sort of sand coloured (2 Tbsp)
  • 2/3 cup shortening
  • 2/3 cup molasses
  • 3 cups raisins

Step 1

Add the sugar to the warm water and proof the yeast. In a large bowl, mix the flour, salt and cinnamon. Add the shortening, molasses and raisins and mix until the raisin eyes start staring at you. Add the yeast mixture. Add water to make a soft dough. Knead, adding a bit of flour to the board so it doesn't stick. Knead 10 minutes more. Put aside to rise in a warm place until double in bulk. Punch down, knead 5 minutes and put into pans. Bake in a 400 degree F oven for about 45 minutes.
