Ingredients
- in large bowl mix:
- large 11x9x3 inch pan
- 2 cups sugar
- 1/2 cup oil
- 5 med. eggs
- Add:
- 2 cups flowr
- 2 t. baking powder
- 1 1/2 t. soda
- 1 t. salt
- 2 1/2 t cinnamon
- 2 3/4 cup grated carrots
- 1 8 1/2oz. can of drained crushed pineapple
- 3/4 cup chopped pecans
- 1/4 cup coconut

Step 1
bake at 350 for 45 minutes
frost with cream cheese frosting:
1/2cup butter
12oz. cream cheese
1t. vanilla
16oz. 10x sugar
