Ingredients
- 4 medium potatoes, cut into 1 inch cubes
- 1 medium onion, chopped
- 3 Tbsp grated Parmigiano Reggiano cheese
- 1 Tbsp minced chives
- 1/2 tsp seasoned salt
- 1/4 tsp pepper
- 2 Tblsp butter
- 1/2 c cooked crumbled bacon
- 1.2 c shredded cheddar or Colby cheese
- 1/2 cup Mexican blend cheese ( I used Sargentos Artisan Blend)

Step 1
1. Parboil the potatoes 12 minutes.
2. Preheat oven to 450 degrees.
3. In a large bowl combine the first six ingredients. Put in pre-greased oven dish or wrap in double heavy duty foil. Cover.
4. Bake until tender, about 15 minutes.
5. Sprinkle the bacon and cheese over potatoes and return to oven, cook until cheese is melted, about 5 minutes.
