Grilled Jerk Pork Tenderloin

This version requires about 6 hrs marinating time, but only about 20 minutes grilling timhe. You can grill corn on the cob along side the meat.

Ingredients

  • 2-3 cups Mesquite Wood Chips, covered
  • in cold water X 1 hr or more
  • 1 Pork Tenderloin
  • 1 Red Onion (about 9.5-10 oz),
  • cut into six pieces
  • 1 Large Jalapeno w/seeds, halved
  • 1/2 oz sliced ginger root
  • 2-3 large garlic cloves
  • 1 Tbs lime juice
  • 1/2 Cup Cider Vinegar
  • 1 Tbs Olive Oil
  • 1 Tbs brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp red pepper
  • 1/2 Tbs Allspice

Preparation

Step 1

Rinse tenderloin and pat dry; scored tenderloin in three places on both sides and set aside.
Place all ingredients in food processor and blend until smooth.
Place tenderloin in large plastic bag; pour in pureed ingredients. Seal bag, expelling as much air as possible and roll tenderloin to cover with ingredients. Refrigerate 6 hrs or more.
Place wood chips in smoker box and light grill to hi. When smoke appears, turn all burners to medium and grill tenderloin about 8-10 minutes per side.
