Ingredients

  • 1 cup Salsa
  • 2 teaspoons cornstarch
  • 1 Tablespoon oil
  • 1 medium green pepper
  • 1 12 oz. can of corn (can use frozen corn)
  • 3 green onions
  • 1 pound ground beef
  • 1 cup chopped tomatoes
  • 1/2 cup shredded cheese - Monterey Jack with jalapenio peppers

Step 1

Combine salsa and cornstarch - set aside. Put oil in stir fry pan on medium high heat; brown ground beef with the onions and peppers. Add corn, stir fry until hot, add salsa mixture. Top with tomatoes and cheese.
