Ingredients
- 1 cup Salsa
- 2 teaspoons cornstarch
- 1 Tablespoon oil
- 1 medium green pepper
- 1 12 oz. can of corn (can use frozen corn)
- 3 green onions
- 1 pound ground beef
- 1 cup chopped tomatoes
- 1/2 cup shredded cheese - Monterey Jack with jalapenio peppers

Step 1
Combine salsa and cornstarch - set aside. Put oil in stir fry pan on medium high heat; brown ground beef with the onions and peppers. Add corn, stir fry until hot, add salsa mixture. Top with tomatoes and cheese.
