Cumin spiced chicken with greens

Ingredients

  • 1 whole chicken (3-4lbs)
  • 2 t plus 2tsp olive oil
  • 2 t ground cumin
  • salt
  • pepper
  • 4 cloves garlic, smashed
  • 4 sprigs thyme
  • 1 t lemon juice
  • 1 t soy sauce
  • 2 c mizuna or baby arugula
  • 1 european cucumber seeded and sliced on the bias
  • 1/4 red onion cut into slivers

Preparation

Step 1

1) preheat oven to 425. pat chicken dry and brush with 2 tsp olive oil; sprinkle with salt, pepper and cumin. on a roasting rack place garlic, thyme and place chicken directly on top. roast for 1 hr or til 165 degrees. remove and allow to rest for 15 minutes.

2) in large mixing bowl add soy sauce, lemon juice, 2t olive oil and salt and pepper to taste. whisk to combine. add greens, cucumber and onion. toss to evenly coat. salt and pepper to taste again if needed.
