Ingredients

  • 2 T unsalted butter
  • 1 med. onion, minced
  • 2 garlic cloves, minced
  • 1 T fresh thyme, chopped
  • 1 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 1/2 #russet potatoes, peeled and sliced 1/8 in thick
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 bay leaves
  • 1 cup shredded cheddar cheese

Preparation

Step 1

1. Heat oven to 425

2. Melt butter in large pot over med. high heat. Add onion and cook until soft and begins to turn brown. Add garlic, thyme, salt and pepper and cook another 30 sec.

2. Add potatoes, broth, creamed and bay leaves and bring to simmer. Reduce heat to med. low and cover. Simmer until potatoes are just tender about 12 min. (Add 2 cups diced cooked ham here)

3. Transfer to 1 1/2 qt. baking dish and sprinkle with cheese. Bake until the top is golden brown
