Camp Michigania Granola

I got this recipe from a magazine years ago but I don't remember which one. This makes a lot! There are directions below to make a third of a batch.

Ingredients

  • 3 T cinnamon
  • 3 boxes old fashioned oatmeal (2lb 10oz size)
  • 4 cups sunflower seeds
  • 3 cups almonds
  • 1/2 cup vanilla
  • 2 1/2 cups honey
  • 2 1/2 cups dark Karo syrup
  • 2 cups finely chopped peanuts
  • 10 cups raisins (or dried fruit of your choice)

Preparation

Step 1

Preheat oven to 350 degrees

Combine all ingredients except the dried fruit and mix well

Spread a portion of the mixture onto a large cookie sheet and bake for 40-45 minutes, stirring from time to time

Continue baking additional portions of the mixture

Allow mixture to cool, then add the dried fruit and mix well

Store in a tightly sealed container

Variations
For a great low fat trail mix, combine ¼ cup granola with one cup of your favorite non-fat cereals such as Rice Chex, Fruit Filled Mini Wheats or Oat Bran O's

To add a little extra flavor to breakfast oatmeal, try adding ¼ cup of the granola mixture to two servings of oatmeal. Increase the recommended amount of water by four tablespoons and cook the entire mixture according to the directions on the oatmeal package
To make 1/3 of the batch...

1 T cinnamon
1 box oatmeal (2lb 10oz)
1 1/3 cups sunflower seeds
1 cup almonds
2 ½ T vanilla
2/3 cup plus 2 ½ T each honey and dark Karo
2/3 cup chopped peanuts

Bake as directed
