Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 1/2 cups water
  • 1/4 cup raisins
  • 1/2 cup apricots, chopped
  • 1/2 cup pistachios
  • 2 tablespoons olive oil
  • 1/2 cup pomegranate seeds
  • Salt and pepper to taste

Preparation

Step 1

Prepare the quinoa according to package directions. Let cool. Add remaining ingredients and toss. Refrigerate for about an hour.
