Ingredients

  • 2 ripe bananas
  • 2/3 cup canola oil or low fat margarine
  • 2/3 cup sugar
  • 1/2 cup egg beaters
  • 2 Tblsp milk
  • 1 3/4 cup whole wheat flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1 Tblsp cardamom
  • 1/2 cup walnuts

Preparation

Step 1

Blend bananas until smooth
Add next 4 ingredients and blend
Add dry ingredients and blend
Stir in walnuts

Pour 1/2 mixture into bread pan coated lightly with cooking spray
Sprinkle a layer of cinnamon in the middle and swirl slightly
Pour remaining batter on top
Sprinkle with cinnamon (or a cinnamon and sugar mix for a crunchier top)

Bake at 350 for 60 minutes
