Ingredients
- 1/2 cup chopped green and/or red bell pepper
- 1/4 cup chopped onion
- 6 oz chicken breast, about 1 1/3 cups, bite-sized pieces
- 4 eggs
- 1/3 cup reduced fat sour cream
- 1/2 tsp fajita or Mexican seasoning
- 1 tomato sliced
- Chopped cilantro
Preparation
Step 1
1. Coat 8" oven-proof skillet w/ non-stick cooking spray. Cook bell pepper, onion and chicken over medium-high heat about 5" or until vegetables are tender-crisp.
2. In medium bowl, beat together eggs, sour cream and seasoning until blended. Pour over chicken mixture. Cook, covered over medium-low heat 8-10" until egg is almost set. Uncover, add tomato.
3. Let stand covered 5-8" or broil about 6" from heat 4-5" until egg is completely set in center..
4. Garnish w/ cilantro. Cut into wedges. Serve.
