Maple Planked Herbed Salmon

Ingredients

  • 1 Compliments Maple Plank
  • 1/4 cup finely chopped mixed herbs (chives, parsley, dill, rosemary, basil, mint) 60 mL
  • 2 tbsp Compliments Honey Mustard 30 mL
  • 10 oz (approx. 2) salmon fillets 280 g
  • 1 tbsp Compliments Pure Olive Oil 15 mL
  • Salt & pepper, to taste

Preparation

Step 1

1. Presoak maple plank and preheat barbecue according to package instructions.
2. In a small bowl, combine herbs with honey mustard.
3. In a separate dish, gently coat salmon with olive oil. Season with salt and pepper to taste.
4. Arrange salmon fillets upright and spread herb mixture on top of each fillet using a spoon.
5. Place pre-soaked plank on barbecue grill and close lid. When smoke develops, carefully place salmon fillets on plank, herb mixture facing up.
6. Close lid and cook for 12 to 15 minutes or until salmon flakes easily with a fork.
