Saucy Peas and New Potatoes

Ingredients

  • 1 lb tiny new potatoes
  • 1 (10oz) pkg frozen peas
  • 1 cup evaporated skimmed milk or low fat (1% milkfat) milk
  • 1 Tbsp all purpose flour
  • 1/4 tsp salt
  • 1/8 tsp ground nutmeg
  • dash black pepper

Preparation

Step 1

Cut any large potatoes in half. Cook the potatoes for 10 minutes, then add the peas and cook for 5 minutes more or until tender. Meanwhile, in a small saucepan, whisk together the evaporated skimmed milk, flour, salt, nutmeg, and pepper. Cook over moderate heat, whisking constantly, until mixture starts to thicken. Cook and whisk for 2 minutes more or until thickened. Pour over the peas and potatoes; stir until mixed.
