Cake (Chocolate Flourless Cake

Ingredients

  • For Chocolate Mouse
  • for flourless gateau
  • 1/2 lb. bittersweet chocolate
  • 1 cup heavy cream
  • 1 whole egg
  • 2 egg whites
  • 2 egg yolks
  • In double boiler, melt chocolate. Combine whole egg with egg yolks. Whip heavy cream to stiff peaks. Whip egg whites to stiff peaks. Whip whole egg mix into chocolate until smooth. Fold whipped cream

Flourless Cake (Gateau)

8 ounces bittersweet chocolate
6 ounces butter
6 ounces sugar
1/3 cup coffee
3 whole eggs

In double boiler melt chocolate and butter. Combine sugar and coffee and bring to a boil. Add sugar mixture to melted chocolate. Whip in whole eggs one at a time till smooth. Pour into papered 9" cake pan and bake at 250 degrees F. in water bath for 1 1/2 hours or until middle of cake has set. When done, turn off oven and let sit in oven until able to pull out with hands. Let chill overnight before finishing with mousse. Top with chocolate mousse from recipe on the left and garnish with fresh berries and whipped cream.
