Curried Fruit And Chicken

Ingredients

  • SAUCE:
  • 1 cup orange juice (or 1/2 orange and 1/2 pineapple juice)
  • 1/3 cup honey
  • 2 tablespoons lemon juice
  • 2 tablespoons curry powder
  • 1 teaspoon salt
  • 2 tablespoons corn starch
  • CHICKEN:
  • 1 package chicken fryers
  • 2 tablespoons butter
  • Mixed fruit (pear, apple, orange, pineapple, grapes)

Preparation

Step 1

Sauce: Mix all sauce ingredients in blender.

Cooking: Preheat oven to 350 degrees. Melt butter in large iron skillet. Saute chicken until brown (with skin side down); add sauce.

Bake twenty minutes and turn chicken over. Add sliced fruit (mixture to your liking) and baste. Bake for 30 minutes more (basting occasionally).

Serve over rice.
