Seafood Coconut shrimp with Blueberry Cocktail Sauce

Ingredients

  • To prepare sauce mix:
  • 4 ounces cherries in heaavy syrup
  • 4 ounces blueberries in light syrup
  • 1 cup ketchup
  • 2 teaspooons sugar
  • 1/2 teaspoon lemon juice
  • 2 dashes of Tabasco
  • 1 teaspoon horseradish

Preparation

Step 1

Peel and devein 32 shrimp
(16 to 20 count)
Heat oil for deep frying to 350 Degrees F.


Mix 1 cup coconut and 1 cup cracker meal

To Bread Shrimp
Dip shrimp in flour
Then into milk
Then into coconut mixture

Deep fry approximately 2 minutes or until golden brown.

Serve 8 shrimp to plate with serving of blueberry cocktail sauce.
