Ingredients
- Caribbean Sauce
- In stock pot bring to boil
- 1/2 quart water
- 1/8 cup white wine vinegar
- 1 tsp. salt
- 3/8 cup sugar
- In Pan Saute'
- 1/2 cup red pepper strips
- 1/2 cup green pepper strips
- 1/2 cup yellow onion strips
- 1/4 pineapple ( cut in strips)
- 1 mango (cut up)
- Add vegetables and fruit to water. Add 2-3 tablespoons corn starch to thicken.
Preparation
Step 1
In Pan Saute'
2 tablespoon olive oil
4-8 ounces Mahi Mahi
Cook to medium done (do not overcook)
Prepare a wild rice following directions on box. Place 6 ounces wild rice on plate. Put Mahi Mahi on rice and ladle sauce on fish.
