Ingredients
- 14 oz high quality dark chocolate(at least 60 percent cocoa solids)
- 6 1/2 oz sweet cream(38 percent fat)
- 1 1/2 oz unsalted butter
- 2 oz aged brandy

Preparation
Step 1
Melt the chocolate in a double boiler. Add the sweet cream and bring to a boil while stirring constantly. Let cool a little. Add the butter and stir well. Allow the mixture to drop below 86F then add the brandy. Chill to room temp. Whip gently. Using a tsp scoop small balls and cool in the fridg for several hrs. Roll balls by hand an coat with broken nuts or cocoa powder.
