Ingredients
- Caribbean sauce
- In stock pot bring to boil
- 1/2 quart water
- 1/8 cup white wine vinegar
- 1 teaspoon salt
- 3/8 cup sugar
- IN PAN SAUTE'
- 1/2 cup red pepper strips
- 1/2 cup green pepper strips
- 1/2 cup yellow onion strips
- 1/4 pineapple (cut in strips)
- 1 mango (cut up)
- Add vegetables and fruit to wter. Add 2-3 tablepoons corn starch to thicken.
Preparation
Step 1
IN PAN SAUTE'
2 tablespoons olive oil
4-8 ounces Mahi Mahi
Cook to medium done (do not overcook).
Preparae a wild rice following directions on box. Place 6 ounces wild rice on plate Put Mahi Mahi on rice and ladle sauce on fish.
