Scallop Potatoes Supreme

Ingredients

  • 1 large onion, diced
  • 1 medium green pepper, diced
  • 2 cups fresh mushrooms, sliced
  • 1 pound grated cheese, save some for top
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon seasoning salt
  • 1 teaspoon salt
  • 1 teaspoon garlic, chopped
  • 2 tablespoons butter
  • 12 each medium potatoes

Step 1

SLICE, rinse and dry the potatoes. Put a layer of the potatoes in a deep baking dish. Top with some of the onion, green pepper, cheese, seasoning and butter. Repeat instructions until all ingredients are used - end with a potato layer, but save some of the cheese for the last few minutes of baking.

MIX milk and mushroom soup together. Pour over potatoes. Bake for 1 1/2 hour at 370 degrees. Five minutes before serving, sprinkle on the reserved grated cheese and return to oven until melted.
