Carrot and Raisin Salad

Ingredients

  • 2 - 2 c. grated carrots
  • 1/2 - 1/2 c. canned crushed pineapple (no sugar added)
  • 2 - 2 tbsp. dark raisins
  • 1 - 1 tbsp. lemon juice (optional)
  • 1/4 - 1/4 c. plain lowfat yogurt
  • 2 - 2 tbsp. reduced calorie mayonnaise
  • 2 - 2 tsp. shredded coconut

Preparation

Step 1

In a medium bowl, combine carrots, pineapple, raisins and, if desired, lemon juice.

Using a whisk, in small bowl combine remaining ingredients except coconut.

Pour over carrot mixture and toss until well coated.

Cover bowl and refrigerate for at least 1 hour.

Just before serving, toss again and sprinkle with coconut.
