Couscous Pilaf w/Peas

Ingredients

  • 4 Side dish servings
  • 1 Tbsp. olive oil
  • 1 medium onion, finely diced
  • 1 garlic clove, minced
  • 1 cup couscous
  • 1 cup frozen peas, thawed
  • 1 Tbsp. minced fresh dill or 1 tsp dried
  • Salt and pepper
  • 1 1/2 cups vegetable stock
  • 1 Tbsp. cold unsalted butter, cut into bits

Preparation

Step 1

1. Heat the oil in a medium sauce pan, over medium heat Sauté the onion and garlic, stirring often until very soft, about 10 minutes.
2. Stir in the couscous, peas, dill, salt, pepper and vegetable stock, and bring to a boil and remove from the heat. Let the mixture sit until all of the liquid is absorbed about 5 minutes. Fluff it with a fork, then stir in the butter bits. Then serve immediately or cover again and let it sit up to 10 minutes more.

NOTE: Vegetable stock can be made with powdered vegetable stock base, available at health food stores.
