Ingredients
- 1/3 cup water
- 3 Tbsp cider vinegar
- 1 Tbsp chopped purple onion
- 1/4 tsp ground coriander
- 1/8 tsp sugar
- 1/8 tsp dry mustard
- 1/8 tsp paprika
- dash of chili powder
- dash of garlic powder
- 2 medium tomatoes, cut into 1/4 inch slices
- green leaf lettuce (optional)
Preparation
Step 1
Combine first 9 ingredients. Place tomato in an 11x7x1.5 inch baking dish. Pour vinegar mixture over tomato. Cover and marinate in refrigerator at least 30 minutes. Serve with a slotted spoon. Serve on individual lettuce lined salad plates, if desired.
